
1. Cook the rice
Cook rice with water and salt. Spread it on a plate to cool so the grains stay separate.
2. Make the base
Heat oil in a pan.
Add mustard seeds; let them splutter.
Add chana dal, urad dal, red chilies, and curry leaves.
3. Cook brinjal
Add brinjal cubes, turmeric, and salt.
Cover and cook on medium heat till brinjal becomes soft.
4. Add flavour
Pour in tomato puree
Add 2–3 tbsp Mumsome Vangibath powder (adjust to taste).
Cook till the mixture thickens and oil starts separating.
5. Mix rice
Add cooked rice gently.
Mix well without breaking the grains.
Cover and let it rest for 5 minutes.
Finishing touch (optional)
Add a spoon of ghee on top
Garnish with roasted peanuts or cashews
STORAGE INSTRUCTIONS: Store in an airtight container and keep refrigerated.
